In particular, the "Manila Civil Registration" records have proven the most reliable and useful. The trick is that most of these collections are images and aren't indexed or searchable. I'd recommend taking some time digging through the images; it's how I've found some of the most valuable information.

If the person was born between 1900 and 1930, there's a good set of "indices"-- still images-- on FamilySearch that list all of the children born to a particular mother, sorted by maiden name. From there you'll get a birthdate and record number, which can help track down the actual birth certificate, also in that same collection.

It's not easy to work through these records and it's extremely frustrating that doesn't put the same level of effort into collecting Asian records that they do for European, but I found that FamilySearch is the most useful online resource.

If the ancestor you're looking for was born sometime before the 1900s, it's next to impossible to find anything online. Once you've exhausted their online images, you'll want to consider ordering microfilm, sent on loan to a local Mormon church for $7.50 a roll. If you can narrow your search to a particular town during a particular time period (and don't mind learning / using a little Spanish), I've found the church records quite useful. Just expect to sit on your hands for about a month while you wait for the film to be located and mailed. But at least it's an option.

In your case, it might be worth looking into a set of films from the local church in Bulacan, Bulacan. If you have suspicion that anyone in your family may have been baptized or married there, this may throw the door wide open, since there are records all the way back to 1672!
