There are two sources of baptism and marriage records for
Cork:
North East Cork (www.rootsireland.ie)this is a pay website
but a not for profit, you can search most of Ireland. I would look for the births as you have a definite year and both parents names and that is all you need.

Was Bridget 37 as well when she had her children?

You should at least be able to get the son's births, which would give you parish and place, you already have the father and mother's name and mother's maiden names. You might be lucky enough to get the births depending on the survival of parish records.

The Griffith Valuation 1852 in Cork has no Peter Maguire's and there are 1032 Collins! There are 84 Peter Maquire's in other counties.

A 1871 UK Census that only gives Irish born persons, has
a Peter Collins in Wales 65 and 2 Peter Collins in Durham one age 40 and another 32. At least 10 Thomas Collins in Durham. 5 Bridget Collins in Wales.
