Kilkenny is part of a irish history foundation that has baptism and marriage records, if records survived you should be able to find them on www.rootsireland.ie
Griffith Valuation is now used as a census substitute as there are no complete census till 1901.

The earliest census substitute is the Tithe Applotments: www.genealogy.nationalarchives.iewww.census.nationalarchives.ie
