Was her daughter born in Roscommon? Roscommon is one of the few counties with records that extend further back that most counties. Mostly RC. Skeffington sounds very English were they Church of Ireland?
Skeffington records on a CD of Parish records from the
Latter Day Saints, also available on www.familysearch.org
don't start till 1816.
You can probably find her parents names in her children.
The Tithe Applotments 1833 show these Skeffington names.

1 x Bridget
1 x Patt They are all in the townland of Tenlagh in the Parish of Boyle.
There are 47 McGrath's in the Tithe's for Roscommon, 5 in the Parish of Boyle.
The Tithe's above are now used as a census substitute along with Griffith Valuations. This was done in 1858 in Roscommon
and by this time only 1 Skeffington is living in Roscommon.
