trying to locate German surnames connection for our tree

Surnames: Rebstein, Schmidt
I am hoping to find out about immigration information and how I can find where our grandparents came from in Germany.
1. John Baptist Rebstein came to America in 1893 from Germany. He arrived in New York and moved to Buffalo, New York.
2. Jennie C. Schmidt came to America in 1895 from Germany. She also arrived in New York.
John and Jennie married in 1897 and lived in Buffalo, New York.
I have tried to locate info from many sources on this web site and the dates and names of the people I find are totally different than what we know from census' and family records. It's as though they didn't exist in Germany. Could the Rebstein surname be from another country, even though all of our records site Germany? Rebstein isn't even in the German Surname search. I do know that John had a brother that immigrated to South Africa. Is there a German name for "John"? We really don't know much about Jennie Schmidt either. Also, our Rebstein's were Lutheran and John moved to Texas with his children. We don't know what happened to Jennie. John married again and had a farm in Yoacum, Texas.
