Name change mystery

Surnames: Sodawater, Klofhorn
I'm looking for ideas/advice on continuing my genealogical search. Our family name is "Sodawater" and originally our ancestors came from Germany. However, we believe this could be an anglicized name (and no I don't believe its from the German Sodawasser as I've done some searches and I don't believe that was a German surname).

What I know:
John Sodawater b. 1825 in Schwinkendorf married to Sophia (Klofhorn) Sodawater b. 1827 in Grubenhagen arrived in Ontario Canada 1855. Their first daughter was born in Hamburg Aug. 24 1855 (this record was from an Ontario church so also listed as a Sodawater).

I believe they may have left for Canada via Hamburg but I don't know how to proceed with passenger lists. Does ANYONE have ANY insight or suggestions?
