She couldn't possibly be Italian (they have the names: Nobis, Nobilis, Nomis, etc).
My guess is she was from Russia. Russian and Greeks were practically one family those days with hundreds of thousands of Greeks living in Russia and or controlling Russian provinces, and thousands of Russians were living in Greece. Maybe she was a Novikov, Novikos in Greek, shortened to Novis.
You can be 100% sure Novis is not a Greek name
