You can view many of the Canadian Census at Automated Genealogy http://www.automatedgenealogy.com/census/index.jsp
The links in the upper right hand corner take you to the year. The 1901, 1911 and 1851NB all have Victoria information. Be sure to click off all of the alternate spellings that are reasonable as this will increase your chances.
I would also check the PANB archives, especially the RS141 [link on right of home page] and Daniel Johnson's newspaper VR database [under the search menu] at http://archives.gnb.ca/Archives/Default.aspx?culture=en-CA
