Have you seen Jean Baptiste on a census? I think I saw him on the 1891 census of Canada at Ancestry.ca. The area was Quebec > Québec City > St Roch South Ward. By then, he was 77. Have you seen him on an earlier census? Have you checked for baptisms of his children? Perhaps the mother's name is on a child's baptismal record. If you can track him on the census, you might get an idea of where his first wife died. Perhaps you could locate her burial.
If you don't have a subscription to Ancestry.ca, I think they might be offering a free trial. You could do some searching there.
