My mother was a Saltaformaggio before marriage and someone in our family researched the family tree. Serafino Saltaformaggio was my great great grandfather (i believe)
He worked in Plaquemines and grew orange trees. I don't know how much help I could be ..but most of my relatives..live in BOGALUSA and know a lot more about the saltaformaggio story. Please write when you can. Perhaps we could discuss it more.
