Ancestry.com has the following database which has the docket numbers. You can find in in the Card Catalog.

Index of wills, inventories, etc. in the Office of the Secretary of State prior to 1901

I have a number of docket numbers I was looking at on FamilySearch. A few days ago FamilySearch changed the way you locate New Jersey probate records. They no longer group probate records by docket number. They are grouped by a range of years. The first few pages of each range of years list the names of the people who wrote wills and the page number where the will can be located.
When I located a particular docket number I found the will, inventory, letters of administration, and anything else associated with that docket number. When I use the new system to locate a will I find only the will, none of the other documents. I have reported this to FamilySearch but have not heard back from them.
