Seems I was misinformed and there was no law against having more than one name:

This actually agrees better with what I'm seeing. While not necessarily illegal, it was still fairly rare to have more than two names in Colonial America, at least outside of the landed yeomanry of places like Virginia.

And the circumstances here do not seem to suggest that either. I would still be very reluctant to accept a pre-revolutionary "Mary Elizabeth" as genuine, without a strong primary source to support the claim.
