Back for a look but don't have a lot of time. You have done a lot of work - some of it down more than one path so let's look at the parents of Ole Olsen b abt 1844. Re. his father Ole Olsen - we need his marriage to the mother, Berit Pedersdatter, to find out the parents of this couple. Biret Pedersd. Bjerkeset was a widow in 1910 census and listed with birth date of 31 July 1821. 1900 census says Biret was born in Øre ca 1820. 1865 census in Thingvold Prestegjeld, Øre sokn, says Ole Olsen was born about 1817 in Thingvold. Thus your candidate to be him is reasonable. Yet this name "Ole Olsen" is so common that we need a more solid connector - the marriage record for Ole and Berit will (probably) do the trick. My computer isn't letting me search Norway Digital Archives at the moment...
