I like to check every once in a while to see if I can find new information for the posts on this forum. I've found nothing new on yours for years. Today I discovered that, after all this time, the Eulalie Gautier you have is the wrong one. I found her marriage (1877 Nice) and death (1941 Nice) records and births of two children (1878 & 1880 Nice) which confirm that she can't be the one who married Charles Huard. I made a family tree with images of the records so you can see what I mean. Please look at

On most of the Canadian censuses Eulalie has her birthday as December or February 1856. The "wrong" Eulalie was born in March 1852.

I'm sure this is very disappointing for you! I have started a new search and will keep you posted. Did you get her surname from her death certificate or somewhere else and is it definitely spelled Gautier? Are any other surnames or anywhere else besides Nice ever mentioned on any records you have?
