I would take the copy over to a Catholic priest and ask if he could transcribe it. From what I understand, priests still have to know Latin. Or, get a Latin dictionary and try translating.
I looked at the few death records that I have and which I had translated. The ones where the parents' names are mentioned are the deaths of children. The one that I have for an older man does not have his parents' names but it does have his son's name but his son was the one reporting the death. These were all civil records rather than church records. I am beginning to regret that I didn't take Latin in high school.
