I've not been to Italy yet and I only know a few words of Italian, just enough to get basic information from the records.
You said that you haven't been able to get past 1850. You are in all kinds of luck.
There are Civil Registation records from Carini, from 1820 to 1898 on microfilm (on 65 rolls) and there are census records from 1681 to 1748 on 7 rolls.

you can find the address of a Family History center near you where you can order these records and read them.
