Cath Baylon/Boylan married Andrew Coffey in Ireland

Surnames: Baylon/Boylan married Coffey
Tracing my family history. My great grandfather was born in Jersey City, NJ in 1881, his parents were born in ireland, met in NJ and Married in James Sr. and Mary Huges 1879 it lists James Sr's parents as Groom's Father's Name: Andrew Coffey, Groom's Mother's Name: Cath. Baylon. Since I know from other records that James Sr Andrews son was born about 1847 in Ireland that leads me to think that his parents were married before he left Ireland and I can find no manifest that they were all together. I am guessing their birth year is about 1820-1826 or so. I am afraid I do not know if Andrew and Cath (unsure whole name) even migrated. An old census around then showed 1 family and it was in Castlecomer, Kilkenny.. A more recent census shows the name is common Monaghan and Cavan. Anyone have any connection on any of this?
