I have the 1871 on CD so I had a look at Hunter St - there were more houses in South Hunter St than Hunter St. Most of the names are so faint that they are virtually unreadable. This could be why I can't find him on the 1871 if they have been unable to read the entry to transcribe the name - it's so frustrating when that happens - although there's no guarantee he was in Hunter St in 1871
