My mother's maiden name is Einbinder, and from what I believe it does derive from judism. My uncle was once told that the "binder" came from the duty a person in a synogogue would have. The one who held the binding of the bible scrolls during the service and fastened them when the reading of the bibled was finished was the this 'binder". From my knowlege the name is Russian for my ancestry but it is possible that it could be Polish for others.
