Eisenstine, Eisenstein

Looking for any info. on my paternal great grandmother whose name was Emma Eisenstine. The "tine" spelling is my uncle's best guess but I think the "tein" spelling is more probable. She married James Senter Rice and may have been in the San Angelo, Texas area at the time. The approximate time would have been the mid to late 1800s. Lots of mystery surrounds this woman. My family says there were stories of her father being from Germany or somewhere in Europe and even perhaps of royal blood. Her father went back to Europe on the death of some relatives and never returned. However, some years later her sister (known to be her father's favorite) suddenly just disappeared. Some speculate he came back and got her. There is also a story of her brother being shot in a card game in Silver City, NM. Fascinating stories. I, too, am fascinated but frustrated by lack of info. Have tried both spellings and still coming up empty. Have no information on year of birth, place or anything else. To make it even more torturous....I have a diary she kept dating back to 1880s....just little tidbits of her life. Would love to know more but will have to have some help. Hints on researching Jewish history would also be appreciated. Thanks for anything!!
