My last name is BAGANZ, and I've seen it spelled BAGENZ, BREGENZ, BAGANCZ, BAGANDT, BAGANTZ and BAGANS. The BAGANS family came to the US with the spelling of BAGANZ. They changed it for some reason to BAGANS. Sometimes the owners change the spelling to correspond with the sound. Maybe some pronounce the sound "z" or the sound "s." I have been doing etymological research on the name BAGANZ for many years, and I think ENZ and ENS are the same name.
