I found a fantastic article here (
http://web.me.com/ebauer/translations/page4/page4.html) by a German researcher.
To summarize: the various German states agreed to give citizenship to Jewish residents in the 1800s--but made them change their names to a traditional German name. According to the site, there is at least one case (but probably maney) where the family chose "Fuchs". That, in addition to any natural intermarriages, makes it very difficult to tell whether someone is Jewish or Christian just by the name.
Best of Luck!
