I wondered who W. W. Harris was listed as informant on father Elbert's death certificate as I could not find Elbert except for the 1900 census, W W I draft registration and his death certificate. I presume that Elbert was born around Corinth as were his aunt's Diddie Jessie and Alice Alene Harris.
I think you mean John F Harris was deceased by the time your father was born as Wm H Harris was in Pushmataha county OK at that time or at least for the 1910 and 1920 census records.

Even though Elizabeth Arabella, daughter Alice and grandson Arthur Harris were counted in Falls Co TX 1900 census in June; Alice Harris married Joe Frank Coffey in McLennan Co in December same year and Eddy is where Joe, Alice and son A G Coffey are buried and I am almost positive that John F Harris, who I believe was William and Laura's son, married Belle Daughtery in McLennan Co 25 Jan 1893.
It is noted on the 1900 census in Coctaw Nation that "F Harris", living next to W H and L A Harris, had been married 7 years. Their daughter Ona Marie was born in Texas July 1896 and Elbert's younger sisters Pansy, Pearl May and Zula B Harris were born in TX 1882 - 1887 very possibly in McLennan County before moving into Indian Territory sometime after Ona Marie Harris was born and before the 1900 census.
If you could obtain copies of death certificates, social security application forms or other written documentation for Pansy, Pearl May and Zula B Harris showing where they were in the timeframe of 1882 - 1896 may give you a location on where to begin to look for John F Harris resting place.
This leads me to think that John F Harris made the trip to Texas shortly shortly after the 1880 census and died somewhere in Texas before 1900 and I did not find Elizabeth Arabella Harris in the 1910 census who could also be buried in Eddy with Alice, Joe and son A G Coffey.
I do believe that James B McKain, Baptist Minister, wife "Apsey" were Elizabeth's parents but need documentation to confirm and I did not find a marriage record online in any of the genealogy websites.
It appears that your great great uncle James Thomas Harris b. 1852 remained in MS last census I found without a problem was 1920 in Alcorn County which is next to Prentiss as I recall. I have a great grandmother who was born in Booneville Prenttis Co in 1876 and my Jones' family is from Tishomingo Co originally.
There were also one children of Wm H and Laura A Harris that were unaccounted for per 1900 census there were 8 and all were alive. Do you know all of the names of Elbert's siblings ? I have a feeling it was a daughter born between Arthur and Elbert who was already married by 1900. Since they were not listed in the 1880 census does not help.

I do not find a cemetery that is named Eddy. There is a Bethany Cemetery near the community of Lorena and Bruceville-Eddy that is adjacent to the Bethany Baptist Church. Photo online shows a small cemetry in a rural area.
Other names for cemetery listed as Bethel, Canuteson, Knutson and Sage Chapel.
