I don't know much because our family is detached, but because of my former occupation, I have a little interesting informaiton.
In general, in Poland, the "ski" suffix was reserved for the nobility. For that reason, rather than shorten names at Ellis Island, like many did to sound more American, many Polish added the ski... (to ennoble themselves?).
So if you grew a ski at Ellis Island, that may be the reason.
