Hi, This may be of use to you: just as many names were changed by immigration authorities, penmanship, attempts to hide hispanic backgrounds, etc, there is ample evidence that the names Melendres and Melendrez were and are virtually interchangeable. I am pretty certain that I am a descendant of Don Pablo Melendres/z, the first Alcalde of Dona Ana, NM and first American Mayor of Dona Ana. His name and that of others in my family tree are sometimes listed with the "s" or with the "z". I found a couple examples of the name spelled both ways in the same certificate of birth or marriage! Mine was one of a group of families that moved from Dona Ana to California about 1920.
