Joseph Odell didn't marry Unity Hopper in Rockingham Cty, NC 1775

It's been a common held belief that this occurred around 1775 because Unity ODEL is listed as a beneficiary in Joshua Hopper's will in 1824. The big problem with this finding is that I've tracked the Mercer Cty, KY tax lists for each year since they moved there around 1810. Joseph Odell disappears in 1814, the year his estate is probated leaving Unity as a widow. Her name then disappears from the Tax lists in 1818, six years before Unity is listed in the will. Surely her brothers and sisters would have found out in a six year period that she died and not included her in the will. Unless, of course, her maiden name wasn't really "Hopper" after all or she wasn't a member of this particular Hopper family. I believe her maiden name wasn't really Hopper; I really can't explain it rationally any other way. I believe it's "Callahan" because this is another family in their church organization that that also had daughters named "Unity". Any other thoughts on this?
