I have the 1841 census for Stirling, the official one, and there is no Georgina Paterson living with the family so Ancestry has made an error there.

On Jane Mustard Paterson's death cert. in 1869 Stirling, Charles Paterson is listed as a Skinner.

My greatgrandmother was Rachel Paterson B.abt. 1838 Stirling. She married Alexander Laing in 1857 Stirling.
