John Simcock Chester Co PA - Penn fleet

I have just begun my research into the Simcox/Simcock line, which has thus far involved only online (database) research as I am currently living in Florida and am still learning about the resources available to me. I have learned the following information from family history, the online LDS records and from scouring the internet and message boards.
I am a descendant of the John Simcock, Chester Co PA line. My grandmother was Annabelle Marion Simcox, daughter of William H. Simcox, son of William W. Simcox, son of Townsend Simcox, son of Emmor Simcock, son of James Simcock, son of Samuel Simcock, son of Benjamin Simcock, son of Jacob Simcock, son of John Simcock (immigrant, part of Penn's fleet), son of Arthur Simcock (ENG), son of George Simcock (ENG), son of Arthur Simcock (ENG), son of John Simcock (ENG)...
I have several dates and names of many siblings if this is helpful to anyone for leads, but again this should be confirmed with original reports (which I hope to do some day).
I have had a few questions running through my head and was wondering if anyone would care to discuss:
Any ideas on why the name changed from Simcock to Simcox?
My grandmother (annabelle) was not a Quaker and none of her children remember her ever talking about Quakerism, does anyone know where in this line the Simcocks left the Quaker faith and why?
From stories I have read, it sounds as though John Simcock was wealthy in part due to the land grants he owned and sold. I read that his estate was willed to his son Jacob who later (accd to the Records of Chester Monthly Meeting on the 27th day of October 1723) signed an acknowledgement for mismanagement of his property. Sounds as though Jacob lost the family fortune, ever heard any story around this?
On "The Friendship" passenger lists I have found online, John, Jacob, and John Jr are listed, but no women. Any idea whether John's wife and daughters came at this time as well, but were not listed, or did they come later?
Any info on John Simcock's (immigrant) wife/wives? I've heard of an Elizabeth (surname unconfirmed) and also potentially a Mary Boulton.
