2 Ulmer brothers migrated to Australia 19th century

My husband's great grandfather and his brother migrated to southern Australia in the 1800s from Ulm, Germany. They were both pork butchers and probably migrated to escape religious persecution. I know they eventually settled in western Victoria. My husband attended a family reunion about 26 years ago and said the Ulmer side of the family was very obvious with their striking red hair.
We will be going to Ulm in August 2008 and would love any further family history to follow.
