Hi Liz,
Please let me know if the birth record turns out to be correct. Have you checked any of the parish registers I suggested?
As far as I am aware, the Whitbread connection to Eastbury Hall was only between 1858 and 1872, when Frederick Sanders Whitbread was a tenant farmer there. He was born in Wapping, Middlesex, in 1819. I have a lot of information on this family, but I do not see a connection between that family and yours.
I have several other Essex lines which I am following. I have 7 Essex family trees at present, although some of these will almost certainly merge when I have more data. I also have quite a lot of Essex records not yet attributed to one of these 7 trees. There is still a lot to do to sort out the Essex Whitbreads and Whitebreads!
