Usually, it means all the existing provinces of Canada, except Québec

More specifically, it usually meant Ontario. The Maritime Provinces were generally referred to as such; ie, Nova Scotia, New Brunswick, PEI.
The vast majority of the immigrants to Ontario in that timeframe were from the British Isles. Trying to narrow it down to a specific place would be impossible.

Saint John New Brunswick was a major port in 19th century and was a destination for thousands of Irish fleeing the famine. Provincial Archives of New Brunswick has a database of Irish immigrants that might be of interest and it might also be worthwhile checking the database of the New Brunswick Museum, clicking on the search Library and Archives, searching under title.
