Can anyone tell me anything about the last name Andersen? I'm looking for its origins but would appreciate any information that you can offer.

Yes all we can know is that it is a patronymic name.

Andersen is a common name in Denmark. A Norwegian family might spell the name AnderSON, and a Danish family might be more likely to use AnderSEN, but there was no firm rule.

"Anders" as a first name in the USA would likely be Andrew.
