When people are not married in my tree. I still enter them into the spouse area. Then on the form to enter information about the spouse, you can change the sex and there is a relationship drop down you can use to change it from spouse to a few other things, including partner.

If you need to make the edit after the fact, go to the person's profile, click edit, then click on the relationships tab.
