Danish surnames

I am trying to research my Danish grandparents and I need some help.
Is there someone out there who can explain Danish surname practices? A few years ago, I took a college course on the litarary works of Hans Christian Andersen, that was taught by a professor of Danish (he himself was from Denmark). The professor, in explaining the spelling of Andersen's surname, that those of wealth have spellings with "on," while those of lesser wealth have spellings with "en." This is the extent of my knowledge. Are there any other common practices that might help me in my search for my ancestors....
Also-does the Danish alphabet have a letter "z"? Wondering because my gggrandmothers name is listed as Elizabeth in my ggrandmothers obituary, but I rarely see this name in census records, but rather Elisabeth or Elsie or Else. Just wondering.
