Occupation sugar maker??

Surnames: Rinn, Frnka, Neseldreher
My gggrandfather, Philipp Rinn came from Bremen Germany to New Orleans in Jun 1857 with his mother and siblings. He was 21 and listed his occupation as a sugar maker. Does anyone know what he meant by this? Did they have sugar production in Germany or was he more likely a confectioner? Any ideas would be greatly appreciated.
