Two Spellings

I normally go with the keyer in similar situations where there are two spellings (signatures trump). In this 1798 Delaware Land Records, throughout the document it is spelled as Cowan (about five times). Then, at the end, it is spelled Coen. As you can see, Margaret signed the document with an X. I also don't think this is their actual signatures as the handwriting is completely consistent thought the document and was written by the recorder. The keyer keyed both John and Margaret twice with the different spellings. You are only to key each individual once per image so I have to delete them on one of the spellings as there is no alias field. In a situation like this I try and find some kind of alternate documentation as to which spelling might be the correct one but I'm not finding much because of the time period. Which one?
